Ingredients

  • 12 oz spaghetti
  • 1 lb large shrimp (peeled and deveined)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 whole lemon (zested and juiced)
  • 1 cup chicken broth (low sodium)
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

Step 2

While the pasta cooks, pat the shrimp dry with a paper towel and season them with salt and pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and sauté for 2-3 minutes per side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.
