  • 120 grams low-fat plain Greek yogurt
  • 60 milliliters unsweetened almond milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 30 grams cold unsalted butter, cut into small pieces
  • 10 grams powdered sugar (optional, for dusting)

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and lemon zest.

Add the cold unsalted butter pieces to the bowl. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
