Ingredients

  • 300 grams white chocolate
  • 100 milliliters heavy cream
  • 30 grams unsalted butter

  • 1 tablespoon lemon juice
  • 50 grams powdered sugar
  • 200 grams white chocolate (for coating, optional)
  • 20 grams sprinkles or finely grated lemon zest (for garnish, optional)

Directions

Step 1

Chop the 300 grams of white chocolate into small, even pieces and place them in a heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream over low-medium heat until it just begins to simmer. Do not let it boil.

Step 3

Remove the saucepan from heat and pour the hot cream over the chopped white chocolate. Let it sit for 1-2 minutes to melt the chocolate.

Step 4

Gently stir the mixture with a spatula until smooth and fully combined. If the chocolate doesn’t melt completely, place the bowl over a pot of simmering water (double boiler) and stir until smooth.

Add the unsalted butter, lemon zest, and lemon juice to the melted chocolate mixture. Stir until well combined and creamy.
