  • 1 pound sea scallops
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the sea scallops dry with paper towels to remove excess moisture. Season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a large skillet over medium-high heat until the butter is melted and foamy.

Step 3

Add the scallops in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes on one side without moving them until a golden crust forms.

Step 4

Flip the scallops and cook for another 1-2 minutes on the other side until cooked through and opaque. Remove the scallops from the skillet and set aside on a plate.

Lower the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds, stirring constantly, until fragrant.
