Ingredients

  • 500 g Salmon fillet (skinless, boneless)
  • 60 g Panko breadcrumbs
  • 1 large Egg
  • 1 tbsp Lemon zest
  • 2 tbsp Fresh parsley (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 4 Brioche or burger buns
  • 4 large Lettuce leaves
  • 1 large Tomato (sliced)
  • 4 tbsp Mayonnaise
  • 2 tsp Lemon juice

Directions

Step 1

Cut the salmon fillet into large chunks and place in a food processor. Pulse a few times until coarsely chopped. Avoid over-processing; the mixture should still have small pieces of salmon.

Step 2

In a large mixing bowl, combine the chopped salmon, panko breadcrumbs, egg, lemon zest, parsley, garlic, salt, and black pepper. Mix well until all the ingredients are evenly distributed.

Step 3

Form the salmon mixture into four equal-sized patties. Place the patties on a plate or tray and refrigerate for 15 minutes to help them firm up.

Step 4

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the salmon patties to the skillet. Cook for 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).

While the burgers are cooking, toast the burger buns lightly in a separate pan or toaster, if desired.
