Ingredients

  • 240 ml Milk
  • 75 g Unsalted butter
  • 50 g Granulated sugar
  • 7 g Active dry yeast
  • 450 g All-purpose flour
  • 1 tsp Salt
  • 2 large Eggs
  • 2 tbsp Lemon zest
  • 120 g Cream cheese
  • 150 g Powdered sugar
  • 3 tbsp Lemon juice
  • 1 tsp Vanilla extract

Directions

Step 1

In a small saucepan, warm the milk until it reaches about 38-43°C (just warm to the touch). Remove from heat and stir in the granulated sugar and yeast. Let sit for 5-10 minutes, or until foamy.

Step 2

Melt 50 g of the unsalted butter and let it cool slightly. In a large mixing bowl, combine the flour, salt, lemon zest, and eggs. Add the yeast mixture and melted butter. Mix until a soft dough forms.

Step 3

Turn the dough out onto a lightly floured surface. Knead for about 8-10 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment for about 5-6 minutes. The dough should be slightly sticky but manageable.

Step 4

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours or until it has doubled in size.

After the dough has risen, punch it down and roll it out on a floured surface into a 30x40 cm rectangle.

Spread the remaining 25 g of butter, softened, across the rolled-out dough. Sprinkle with a mix of 75 g granulated sugar and extra lemon zest for added flavor (optional).

Starting from one long edge, roll the dough tightly into a log. Slice into 12 equal pieces.

Arrange the rolls in a greased 23x33 cm baking dish. Cover and let the rolls rise for another 30 minutes.

Preheat the oven to 175°C (350°F). Bake the rolls for 20-25 minutes, or until golden brown on top.

While the rolls bake, prepare the glaze. In a medium bowl, beat together the cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth.

Remove the rolls from the oven and let them cool for 10 minutes. Spread the lemon glaze over the rolls while they're still slightly warm.
