Ingredients

  • 500 grams carrots
  • 3 medium onions
  • 3 tablespoons olive oil
  • 1 large lemon
  • 3 whole garlic cloves
  • 2 teaspoons fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon honey (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Peel the carrots and slice them into evenly sized sticks, about 2-3 inches long and 1/2 inch thick. Peel the onions and cut them into thick wedges.

Step 3

In a large mixing bowl, combine the carrots and onions. Drizzle with olive oil and toss to coat evenly.

Step 4

Zest and juice the lemon. Add the zest, half of the lemon juice, minced garlic cloves, fresh thyme, salt, pepper, and honey (if using) to the vegetables. Mix well to ensure all flavors are evenly distributed.

Step 5

Spread the vegetable mixture in a single layer on the prepared baking sheet to allow even roasting. Avoid overcrowding the pan for better caramelization.

Step 6

Roast in the preheated oven for 35-40 minutes, stirring halfway through, until the carrots are fork-tender and both the onions and carrots have golden-brown edges.

Step 7

Once roasted, remove the baking sheet from the oven and drizzle the remaining lemon juice over the vegetables for a fresh, tangy finish. Adjust seasoning if needed.

Step 8

Transfer the roasted onions and carrots to a serving dish and garnish with a few sprigs of fresh thyme if desired. Serve warm and enjoy!
