Ingredients

  • 6 pieces beets (medium-sized)
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1 teaspoon honey
  • 1 clove garlic (minced)
  • 4 ounces feta cheese (crumbled)
  • 2 tablespoons parsley (chopped, for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim the beet greens, leaving about 1 inch of the stems attached, and scrub the beets clean under running water.

Step 3

Place the beets on a sheet of aluminum foil and drizzle with 1 tablespoon of olive oil. Wrap tightly in the foil to create a pouch.

Place the foil-wrapped beets on a baking sheet and roast in the preheated oven for 40-50 minutes, or until they are tender when pierced with a fork.
