Ingredients

  • 6 cups chicken broth
  • 2 cups water
  • 1 cup long grain white rice
  • 3 whole large eggs
  • 2 whole lemons
  • 0.5 teaspoons freshly ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley
  • 1 tablespoon olive oil

Directions

Step 1

Pour the chicken broth and water into a large pot and bring it to a boil over medium-high heat.

Once boiling, add the rice, reduce the heat to a simmer, and cover the pot. Let it cook for about 20 minutes or until the rice is tender.

While the rice is cooking, crack the eggs into a mixing bowl. Beat them lightly.

Juice the two lemons and set the juice aside. You should have about 1/2 cup of lemon juice.
