Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 teaspoon Salt
  • 3 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 medium Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1 medium Red bell pepper, diced
  • 2 stalks Green onions, sliced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 0.5 cup Feta cheese, crumbled
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium pot, bring the 2 cups of water to a boil. Add the 1 teaspoon of salt and the rinsed rice. Reduce the heat to low, cover, and simmer for about 12-15 minutes or until the rice is tender and the water is absorbed.
