Ingredients

  • 2 large Lemon
  • 8 pieces Fresh mint leaves
  • 2 tablespoons Granulated sugar
  • 4 cups Water, divided
  • 1 cup Ice cubes
  • 4 slices Lemon slices (optional for garnish)
  • 2 sprigs Mint sprigs (optional for garnish)

Directions

Step 1

Roll the lemons gently on a countertop to help release their juices, then cut each lemon in half and squeeze out the juice into a measuring cup. You should get roughly 1/2 cup of fresh lemon juice. Strain out any seeds.

Step 2

In a pitcher, combine the lemon juice and granulated sugar. Stir until the sugar is completely dissolved.

Step 3

Add 3 cups of cold water to the pitcher and stir well to dilute the lemon juice mixture.

Step 4

Place the fresh mint leaves in a mortar and gently bruise them with a pestle to release their aroma and flavor. If you don’t have a mortar and pestle, use the back of a spoon.

Step 5

Add the bruised mint leaves to the pitcher and stir gently. Let the mixture sit for 2–3 minutes to allow the mint to infuse.

Step 6

Prepare your serving glasses by placing a handful of ice cubes in each.

Step 7

Strain the Lemon Refresher into the prepared glasses to remove the mint leaves.

Step 8

Optionally, garnish each glass with a lemon slice and a sprig of mint for a decorative touch.

Step 9

Serve immediately and enjoy your fresh, tangy Lemon Refresher!
