Directions

Step 1

In a medium saucepan, bring 1.25 cups of water to a boil. Add 1 tablespoon of olive oil and 0.5 teaspoons of salt to the boiling water.

Step 2

Remove the saucepan from heat and add 1 cup of couscous. Stir to combine, cover with a lid, and let it sit for 5 minutes to absorb the water.

Step 3

While the couscous is resting, roughly chop 0.5 cups of shelled pistachios, 2 tablespoons of fresh parsley, 2 tablespoons of fresh mint, and thinly slice 2 scallions. Set aside.

Step 4

In a small bowl, whisk together the zest of 1 lemon, 3 tablespoons of fresh lemon juice, 1 tablespoon of olive oil, and 0.25 teaspoons of black pepper to create the dressing.
