Ingredients

  • 450 grams fresh green beans
  • 45 grams pine nuts
  • 1 whole lemon
  • 2 units garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups water
  • 10 units ice cubes

Directions

Step 1

Trim the ends of the green beans and rinse them thoroughly under cold water.

Step 2

Zest the lemon and juice it, setting both the zest and juice aside.

Step 3

Bring 4 cups of water to a boil in a large pot. Add the green beans and 1/2 teaspoon of salt. Cook the beans for 3-4 minutes, until they are bright green and just tender.

Prepare an ice bath by filling a large bowl with cold water and ice cubes. Immediately transfer the cooked green beans to the ice bath to stop the cooking process. Let them cool for 2 minutes, then drain and pat them dry with a clean kitchen towel.
