Ingredients

  • 6 whole lemons
  • 3 tablespoons sea salt
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • 0.5 teaspoons fenugreek seeds
  • 3 tablespoons vegetable oil
  • 2 teaspoons sugar
  • 3 tablespoons white vinegar
  • 3 whole garlic cloves (finely chopped)
  • 1 tablespoon ginger (finely chopped)

Directions

Step 1

Wash and dry the lemons thoroughly. Cut each lemon into quarters, then slice each quarter into smaller wedges if desired.

Step 2

Place the lemon pieces in a large bowl. Sprinkle the sea salt over the lemons and toss to coat. Set aside for at least 1 hour to allow the lemons to soften and release their juices.

Step 3

In a small skillet, dry-roast the mustard seeds and fenugreek seeds over medium heat until fragrant (about 2 minutes). Remove from heat and grind into a coarse powder using a mortar and pestle or spice grinder.

Step 4

In a large pan, heat the vegetable oil over medium heat. Add the chopped garlic and ginger and sauté for 1-2 minutes until aromatic.

Add the ground mustard and fenugreek seeds, turmeric powder, and chili powder to the pan. Stir to combine and cook for 1 minute.
