Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil

  • 1 medium, diced zucchini
  • 1 large, julienned carrot
  • 2 minced garlic cloves
  • 2 sliced green onions
  • 2 5-ounce cans, drained canned lemon-pepper tuna
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons salt
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Rinse the quinoa under cold water in a fine-mesh sieve to remove its natural bitterness.

Step 2

In a medium saucepan, combine the quinoa and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy. Remove from heat and set aside.
