Ingredients

  • 450 grams Green beans
  • 1 cup Long-grain white rice
  • 2 cups Water
  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Freshly cracked black pepper
  • 1.5 teaspoons Salt
  • 1 tablespoon Butter
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Rinse and trim the ends of the green beans. Set aside.

Step 2

In a medium saucepan, combine the rice, water, and 1 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Once the water reaches a boil, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the water is fully absorbed.

Step 4

While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Be careful not to let the garlic burn.
