Ingredients

  • 450 g fresh green beans, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp freshly cracked black pepper
  • 1 tsp salt
  • 2 tbsp optional toasted almonds or pine nuts

Directions

Step 1

Wash and trim the green beans by snipping off both ends.

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 2-3 minutes, until they turn bright green and slightly tender, but still crisp.

Immediately transfer the blanched beans to a bowl of ice water to stop the cooking process. Once cooled, drain the beans and pat them dry with a kitchen towel.
