Ingredients

  • 1 pound flank steak
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon kosher salt
  • 2 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • 1 quarter cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 10 pieces toothpicks or kitchen twine

Directions

Step 1

Place the flank steak on a cutting board and, using a sharp knife, butterfly the steak. Carefully slice the steak horizontally, stopping about an inch short of cutting all the way through. Open it like a book.

Step 2

Cover the steak with plastic wrap and use a meat mallet to pound it to an even thickness of about 1/4 inch.

Step 3

In a small bowl, combine the lemon zest, lemon juice, minced garlic, black pepper, salt, and olive oil to create a marinade.

Step 4

Brush the marinade all over the surface of the steak and let it sit at room temperature while you prepare the filling.

Step 5

In a mixing bowl, combine the baby spinach, shredded mozzarella cheese, grated Parmesan cheese, and chopped parsley.

Step 6

Spread the spinach and cheese mixture evenly over the marinated steak, leaving a 1-inch border along the edges.

Step 7

Starting from one of the short ends, tightly roll the flank steak into a log. Secure it in several places with toothpicks or kitchen twine to ensure it holds together.

Step 8

Preheat your grill to medium-high heat or your oven to 375°F (190°C).

Step 9

If grilling, sear the pinwheels on all sides for 2-3 minutes per side to achieve a nice crust, then move them to indirect heat and cook for an additional 10-12 minutes until the internal temperature reaches 130°F (55°C) for medium-rare.

Step 10

If baking, place the pinwheels seam-side down on a baking sheet and cook for 20-25 minutes until the internal temperature reaches 130°F (55°C) for medium-rare.

Step 11

Remove the pinwheels from the grill or oven and let them rest for 5-10 minutes before slicing into 1-inch thick rounds.

Step 12

Serve the Lemon Pepper Flank Pinwheels warm with your favorite side dishes and enjoy!
