Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 teaspoons Lemon zest
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 1 teaspoon Garlic powder
  • 3 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped
  • 4 slices Lemon slices (optional garnish)

Directions

Step 1

Place the chicken breasts on a cutting board. Flatten them slightly by placing plastic wrap on top and pounding with a meat mallet to an even thickness (about 1/2 inch thick).

Step 2

Season both sides of the chicken breasts with lemon zest, black pepper, salt, and garlic powder.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken breasts.

Step 4

Cook the chicken for 4-5 minutes per side, or until golden brown and fully cooked. The internal temperature should reach 165°F (75°C). Remove the chicken from the skillet and set aside on a plate.

Step 5

In the same skillet, reduce heat to low and add 1 tablespoon olive oil and 1 tablespoon unsalted butter. Stir until the butter melts.

Step 6

Pour the chicken broth and lemon juice into the skillet, scraping up any brown bits from the bottom of the pan with a wooden spoon.

Step 7

Simmer the sauce for 3-4 minutes, allowing it to reduce slightly.

Step 8

Return the chicken breasts to the skillet, spooning the sauce over the top. Let it cook for 2 more minutes to soak up the flavors.

Step 9

Turn off the heat and garnish with fresh parsley and optional lemon slices.

Step 10

Serve the Lemon Pepper Chicken Sauté warm with your choice of side dishes like rice, steamed vegetables, or mashed potatoes.
