Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic cloves, minced
  • 1 cup Long-grain rice
  • 2 cups Chicken or vegetable broth
  • 1 teaspoon Lemon zest
  • 2 tablespoons Lemon juice, freshly squeezed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Chopped pecans, toasted
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the butter and olive oil in a medium-sized saucepan over medium heat until melted and shimmering.

Step 2

Add the diced yellow onion and sauté until softened and translucent, about 3-4 minutes.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 4

Add the rice to the saucepan and stir to coat the grains with the butter and oil mixture. Toast the rice for 2-3 minutes, stirring occasionally, until lightly golden.

Step 5

Pour in the broth, lemon zest, lemon juice, salt, and black pepper. Stir to combine and bring the mixture to a boil.

Step 6

Reduce the heat to low, cover the saucepan, and let the rice simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender.

Step 7

Remove the saucepan from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.

Step 8

Gently fluff the rice with a fork, then stir in the toasted pecans and chopped parsley.

Step 9

Serve warm as a side dish or enjoy on its own as a light, refreshing meal.
