Ingredients

  • 1 cup Orzo pasta
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh mint leaves (chopped)
  • 1 clove Garlic (minced)
  • 0.25 teaspoons Black pepper
  • 0.25 cup Feta cheese (optional, crumbled)

Directions

Step 1

In a medium saucepan, bring 4 cups of water to a boil and add 1 teaspoon of salt.

Step 2

Add the orzo pasta to the boiling water and cook according to package instructions, typically 8–10 minutes, stirring occasionally to prevent sticking.

Step 3

While the orzo cooks, zest the lemon to measure 1 tablespoon and squeeze 2 tablespoons of juice from the lemon. Set aside.

Step 4

Chop the fresh mint leaves and mince the garlic clove.

Step 5

Once the orzo is cooked to al dente, drain and transfer it to a large mixing bowl.

Step 6

While the pasta is still warm, stir in the olive oil, lemon zest, lemon juice, garlic, and black pepper. Mix well to evenly coat the orzo with the dressing.

Step 7

Gently fold in the chopped mint leaves. Taste and adjust seasoning with additional salt or lemon juice if desired.

Step 8

If using feta cheese, sprinkle it over the top before serving.

Step 9

Serve warm, at room temperature, or chilled as a side dish or light main course.
