Ingredients

  • 1.5 pounds Boneless, skinless chicken breasts
  • 0.25 cup Lemon juice
  • 0.25 cup Olive oil
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Fresh oregano, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 8 pieces Wooden skewers

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Step 2

In a medium mixing bowl, whisk together the lemon juice, olive oil, minced garlic, chopped oregano, salt, black pepper, and red pepper flakes if using.

Step 3

Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Step 4

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.

Step 5

Preheat the grill to medium-high heat (about 375-400°F). If you don’t have a grill, a grill pan can be used on the stovetop.

Step 6

Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece for even cooking.

Step 7

Place the skewers on the preheated grill and cook for 12-15 minutes, turning every 3-4 minutes to ensure even cooking. The chicken is done when it reaches an internal temperature of 165°F.

Step 8

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 9

Serve warm with a side of tzatziki sauce, a simple salad, or warm pita bread for a complete meal.
