Ingredients

  • 1 cup Mixed olives (Kalamata, green, or black)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 1 tablespoon Extra virgin olive oil
  • 1 clove Garlic, minced
  • 1 tablespoon Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 0.25 teaspoon Crushed red pepper flakes
  • 0 Salt, to taste
  • 0 Freshly ground black pepper, to taste

Directions

Step 1

Rinse the mixed olives under cold running water to remove excess brine. Drain them well and set aside.

Step 2

In a medium mixing bowl, combine the lemon zest, lemon juice, olive oil, and minced garlic. Mix well to create a citrusy dressing.

Step 3

Add the rinsed and drained olives to the bowl and toss them in the dressing until evenly coated.

Step 4

Sprinkle the chopped parsley, fresh thyme leaves, and crushed red pepper flakes over the mixture. Stir gently to distribute the herbs and spices.

Step 5

Taste the olives and add salt and freshly ground black pepper as needed. Keep in mind that olives are naturally salty, so use salt sparingly.

Step 6

Let the olives marinate for at least 10 minutes at room temperature to allow the flavors to meld. For a more intense flavor, refrigerate for 1-2 hours and serve chilled.

Step 7

Transfer the Lemon Olive Tapas to a serving dish and enjoy as a vibrant appetizer or part of a tapas spread.
