Ingredients

  • 1.5 cups Old-fashioned rolled oats
  • 0.75 cups Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Granulated erythritol or other diabetic-friendly sweetener
  • 0.33 cups Unsweetened applesauce
  • 0.25 cups Light olive oil or avocado oil
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 large Egg

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium mixing bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, combine the granulated erythritol, unsweetened applesauce, and light olive oil. Stir until smooth.

Step 4

Add the fresh lemon juice, lemon zest, vanilla extract, and egg to the wet ingredients and mix until fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix to ensure tender cookies.

Step 6

Using a tablespoon or small cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Lightly flatten each cookie with the back of a spoon or your fingers to create an even thickness.

Step 8

Bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them to avoid overbaking.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days or freeze for longer storage.
