Ingredients

  • 3 whole Lemons
  • 150 grams Granulated sugar
  • 3 large Eggs
  • 250 milliliters Heavy cream
  • 1 sheet Gelatin
  • 2 tablespoons Lemon zest
  • 2 tablespoons Water

Directions

Step 1

Place the gelatin sheet in a small bowl with cold water and allow it to soak for about 5 minutes until soft.

Step 2

Zest two of the lemons to get approximately 2 tablespoons of zest, then juice all three lemons to yield about 150 milliliters of lemon juice.

Step 3

In a small saucepan over medium heat, combine the lemon juice and granulated sugar. Stir until the sugar is completely dissolved.

Step 4

Beat the eggs in a separate mixing bowl. Gradually pour the warm lemon-sugar mixture into the eggs while whisking continuously to prevent scrambling.

Step 5

Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5 minutes.

Step 6

Remove the saucepan from heat. Squeeze the excess water from the softened gelatin and add it to the hot lemon mixture, stirring until fully dissolved. Allow the mixture to cool.

In a large mixing bowl, whip the heavy cream until soft peaks form.
