  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, softened
  • 1.75 cups Granulated sugar
  • 4 Large eggs
  • 1 cup Whole milk
  • 2 tablespoons Lemon juice
  • 1 tablespoon Lemon zest
  • 0.25 cup Molasses
  • 2 teaspoons Vanilla extract
  • 1 tablespoon Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch bundt pan or loaf pan. Lightly dust it with flour, tapping out the excess.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition.

Step 5

Separate the milk into two equal portions (1/2 cup each). To one portion, stir in the lemon juice and lemon zest; to the other portion, stir in the molasses and vanilla extract.

Alternately add the flour mixture and the lemon-milk mixture to the butter-egg mixture in three additions, beginning and ending with the flour mixture.

Step 7

Divide the batter into two equal portions. To one portion, stir in the remaining molasses mixture to create the darker molasses batter. Leave the other portion as is for the lemon batter.

Using a large spoon, alternate dollops of the lemon batter and molasses batter into the prepared pan. Once all the batter is added, use a knife to gently swirl the batters together to create a marble effect. Do not overmix.

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and allow it to cool in the pan for 15 minutes. Then, carefully turn it out onto a wire rack to cool completely.

Optional: Once fully cooled, dust the top of the cake with powdered sugar before serving.
