Ingredients

  • 1 cup unsalted butter
  • 0.75 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 0.25 cup cornstarch
  • 0.25 teaspoon salt
  • 0.5 cup powdered sugar (for coating)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream the unsalted butter and 3/4 cup powdered sugar together until light and fluffy, about 2-3 minutes.

Step 3

Mix in the vanilla extract, lemon juice, and lemon zest until well incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.

Divide the dough in half. Roll each portion into a log about 1.5 inches in diameter. Wrap the logs in plastic wrap and chill in the refrigerator for at least 1 hour to firm up.

Once the dough is chilled, slice the logs into 1/4-inch thick rounds and place them 1 inch apart on the prepared baking sheets.
