  • 4 large Eggs
  • 120 milliliters Lemon juice
  • 2 tablespoons Lemon zest
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 30 grams Additional powdered sugar

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a medium mixing bowl, combine 227 grams of unsalted butter (softened), 120 grams of powdered sugar, and 300 grams of all-purpose flour. Mix until the ingredients form a crumbly dough.

Step 3

Press the dough evenly into the bottom of the prepared baking pan to create the shortbread crust. Use your hands or the back of a spoon to smooth it out.

Step 4

Bake the crust in the preheated oven for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let it cool slightly while preparing the filling.

In a mixing bowl, whisk together 200 grams of granulated sugar, 4 large eggs, 120 milliliters of freshly squeezed lemon juice, 2 tablespoons of lemon zest, 30 grams of all-purpose flour, 1 teaspoon of baking powder, and 0.25 teaspoons of salt. Ensure the mixture is smooth and well combined.

Step 6

Pour the lemon filling over the pre-baked crust, spreading it out evenly.

Return the pan to the oven and bake for an additional 20-22 minutes, or until the filling is set and no longer jiggles in the center.

Remove the pan from the oven and let it cool completely at room temperature. Once cooled, transfer the pan to the refrigerator and chill for at least 1 hour to set the filling.

Once the bars are chilled, use the parchment paper overhang to lift them out of the pan. Slice into 12 even bars.

Dust the top of the Lemon Love Notes generously with 30 grams of powdered sugar before serving.
