In a large bowl, whisk together the flour, baking powder, and salt, then set aside.
In another bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until the mixture is light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix each addition just until incorporated, being careful not to overmix.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
