Ingredients

  • 12 oz Linguini pasta
  • 1 lb Raw shrimp (peeled and deveined)
  • 3 count Garlic cloves (minced)
  • 2 tbsp Olive oil
  • 3 tbsp Unsalted butter
  • 2 count Lemon (zested and juiced)
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley (chopped)
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0.5 tsp Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguini pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Step 2

While the pasta cooks, pat the shrimp dry with a paper towel and season them with a pinch of salt and black pepper on both sides.

Step 3

In a large skillet over medium heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set them aside on a plate.

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 1 minute.

Return the cooked shrimp to the skillet and gently toss them with the pasta and sauce. Season the dish with additional salt, black pepper, and crushed red pepper flakes, if desired.
