  • 2 tablespoons Powdered sugar
  • 4 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

In a medium saucepan, whisk together the lemon juice, lemon zest, granulated sugar, egg yolks, cornstarch, and a pinch of salt until smooth and well combined.

Place the saucepan over medium heat and cook the mixture, stirring constantly with a silicone spatula, until it begins to thicken. This should take about 5 minutes.
