Ingredients

  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 medium celery stalks, diced
  • 4 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1.5 cups dry red lentils, rinsed
  • 6 cups vegetable broth
  • 1 can canned diced tomatoes (14 oz)
  • 2 cups baby spinach (optional)
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

Step 3

Stir in the minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for 1-2 minutes until fragrant.

Step 4

Add the rinsed red lentils, vegetable broth, and canned diced tomatoes (including their juices). Stir well to combine.
