  • 0.5 teaspoon turmeric powder
  • 1 cup red lentils
  • 6 cups vegetable broth
  • 1 bay leaf
  • 2 cups fresh spinach
  • 2 tablespoons (or to taste) lemon juice
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery, and cook for 5-7 minutes until the vegetables soften and the onion turns translucent.
