Ingredients

  • 100 grams Unsalted butter
  • 150 grams White granulated sugar
  • 2 pieces Large eggs
  • 2 pieces Egg yolks
  • 80 milliliters Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 80 grams All-purpose flour
  • 1 tablespoon Powdered sugar (for garnish)
  • 1 as needed Butter or cooking spray (for greasing)

Directions

Step 1

Preheat your oven to 220°C (425°F).

Step 2

Lightly grease four 6-ounce (180ml) ramekins with butter or cooking spray. Set them aside.

Step 3

In a medium saucepan over low heat, melt the unsalted butter. Once melted, remove it from the heat and let it cool slightly.

Step 4

In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture becomes pale and slightly frothy.

Step 5

Gradually whisk the melted butter into the egg and sugar mixture until fully combined.

Step 6

Add the fresh lemon juice and lemon zest to the mixture, stirring until well incorporated.

Step 7

Sift the all-purpose flour into the wet ingredients, then carefully fold it in until the batter is smooth. Be sure not to overmix.

Step 8

Evenly divide the batter between the prepared ramekins, filling each about two-thirds full.

Step 9

Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain slightly jiggly.

Step 10

Remove the ramekins from the oven and let them cool for 1-2 minutes.

Step 11

Run a knife around the edges of each ramekin to loosen the dessert, then carefully invert them onto serving plates.

Step 12

Dust with powdered sugar before serving. Enjoy the warm, gooey lemon lava with a spoon or alongside a scoop of vanilla ice cream!
