Ingredients

  • 8 tablespoons Unsalted butter
  • 0.75 cups Granulated sugar
  • 2 tablespoons Light corn syrup
  • 0.5 cups All-purpose flour
  • 1 tablespoons Finely grated lemon zest
  • 2 teaspoons Fresh lemon juice
  • 1 pinch Pinch of salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium saucepan, melt the butter over low heat. Once melted, remove the saucepan from the heat.

Step 3

Stir the granulated sugar and light corn syrup into the melted butter until well combined.

Step 4

Add the flour, lemon zest, lemon juice, and a pinch of salt to the saucepan. Mix until a smooth and slightly thickened batter forms.

Drop the batter by teaspoonfuls onto the prepared baking sheets, spacing them at least 3 inches apart, as the cookies will spread significantly while baking.
