Ingredients

  • 4 pounds whole chicken
  • 2 whole lemon
  • 6 whole garlic cloves
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 whole onion
  • 1 cup chicken broth

Directions

Step 1

Rinse the whole chicken under cold water and pat dry with paper towels. Remove any giblets if included.

Season the chicken inside and out with salt, black pepper, and paprika. Drizzle the outside with olive oil and rub it evenly over the skin.

Cut one lemon into thick slices and set aside. Halve the second lemon and place it in the cavity of the chicken along with half the garlic cloves, 2 rosemary sprigs, and 2 thyme sprigs.

Slice the onion into large rounds and layer them on the bottom of the crock pot to create a 'bed' for the chicken.
