Ingredients

  • 2 pounds veal stew meat
  • 0.25 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced into rounds
  • 2 medium celery stalks, diced
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 0.5 cup dry white wine
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1.5 pounds baby potatoes, halved
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a medium bowl, toss the veal stew meat with the flour, salt, and black pepper until the meat is evenly coated.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the veal and brown on all sides, about 5–7 minutes total. Transfer the browned meat to the crock pot.

Step 3

In the same skillet, add the diced onion, carrots, and celery. Cook for 3–4 minutes until slightly softened, then add the minced garlic and cook for 1 more minute. Transfer the vegetables to the crock pot.

Step 4

Pour the chicken broth and white wine over the veal and vegetables. Add the lemon zest, lemon juice, fresh thyme, and chopped rosemary. Stir gently to combine.

Step 5

Add the halved baby potatoes to the crock pot, distributing them evenly over the other ingredients.

Step 6

Cover the crock pot and cook on low heat for 6–7 hours, or until the veal is tender and the vegetables are cooked through.

Step 7

About 30 minutes before serving, stir in the frozen peas and let them cook through.

Step 8

Taste the stew and adjust seasoning with additional salt and pepper if needed.

Step 9

Serve hot, garnished with freshly chopped parsley, alongside crusty bread or a side salad if desired.
