Ingredients

  • 1.5 cups long-grain white rice
  • 2 tablespoons olive oil

  • 3 cups vegetable broth
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh parsley
  • 0.25 cup, chopped fresh dill
  • 2 tablespoons, chopped fresh mint

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well.

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and cook for another minute until fragrant.
