Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 1 lb Asparagus (trimmed)
  • 3 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Honey
  • 1 tsp Soy sauce
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tbsp Parsley (chopped, for garnish)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

Step 2

Trim the asparagus by snapping off the tough woody ends. Cut the spears into 2-inch pieces.

Step 3

In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, honey, soy sauce, salt, black pepper, and red pepper flakes (if using). Set aside.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 5

Add the asparagus to the skillet and sauté for 3-4 minutes, stirring occasionally, until bright green and tender-crisp. Remove the asparagus from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and heat over medium-high heat.
