Ingredients

  • 1 cup Persimmon pulp (ripe)
  • 1.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 0.5 cup Unsalted butter (melted)
  • 0.25 cup Milk
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 cup Powdered sugar
  • 2 tablespoons Lemon juice (fresh)
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, whisk together the persimmon pulp, granulated sugar, eggs, melted butter, milk, and vanilla extract until well combined.

Step 3

In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is smooth and fully combined.

Step 5

Pour the batter into the prepared baking pan and smooth the surface with a spatula.

Step 6

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Remove the pan from the oven and allow the bars to cool completely in the pan before applying the glaze.

Step 8

To make the lemon glaze, whisk together the powdered sugar, lemon juice, and lemon zest in a small bowl until smooth.

Step 9

Once the bars have cooled, drizzle the lemon glaze evenly over the top. Use a spatula to spread it if necessary.

Step 10

Allow the glaze to set for about 10-15 minutes, then use the parchment paper overhang to carefully lift the bars out of the pan.

Step 11

Cut into 12 squares or bars and serve. Store any leftovers in an airtight container at room temperature for up to 3 days.
