Ingredients

  • 400 grams extra-firm tofu
  • 3 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon (grated) ginger
  • 2 cloves (minced) garlic
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 2 stalks (chopped) green onions
  • 1 teaspoon sesame seeds

Directions

Step 1

Press the tofu to remove excess water by placing it between two plates and weighing it down with a heavy object for about 10 minutes.

Step 2

Cut the pressed tofu into bite-sized cubes and set aside.

Step 3

In a small bowl, combine the lemon juice, soy sauce, maple syrup, grated ginger, and minced garlic to create the marinade.

Step 4

Pour the marinade over the tofu cubes in a shallow dish or zip-top bag and let it marinate for at least 20 minutes, turning occasionally to ensure even coverage.

Step 5

In another small bowl, mix the cornstarch and water to create a slurry, and set aside.

Step 6

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Remove the tofu from the marinade (reserving the marinade) and cook the tofu cubes until golden on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.

Step 7

Add the remaining 1 tablespoon of olive oil to the skillet along with the reserved marinade. Bring it to a simmer.

Step 8

Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.

Step 9

Return the tofu to the skillet and toss it gently in the sauce to coat evenly.

Step 10

Serve the lemon ginger tofu hot, garnished with chopped green onions and sesame seeds. Pair with rice or steamed vegetables for a complete meal.
