Ingredients

  • 6 Fresh lemons
  • 2 tablespoons Fresh ginger
  • 1 cup Sugar
  • 2 cups Water
  • 1 cup Ice water

Directions

Step 1

Cut the top 1/3 off of each lemon and set it aside. Using a small sharp knife or spoon, carefully hollow out the lemons, removing the flesh and juice but leaving the rind intact to form lemon cups. Reserve the lemon juice in a bowl, and discard the seeds. Place the hollowed-out lemon cups in the freezer to chill.

Step 2

Grate 2 tablespoons of fresh ginger. In a small saucepan, combine the grated ginger, sugar, and 1 cup of water. Heat over medium heat until the sugar dissolves completely, creating a ginger syrup. Remove from heat and let it cool for 5 minutes.

Step 3

Strain the ginger syrup through a fine-mesh sieve into a large bowl or pitcher to remove any solid pieces of ginger.

Step 4

Measure 3/4 cup of the reserved fresh lemon juice and add it to the ginger syrup. Mix in 1 cup of ice water to dilute the mixture slightly.

Pour the lemon-ginger mixture into a shallow freezer-safe dish. Place the dish in the freezer and let it chill for 1 hour.

Step 6

After 1 hour, use a fork to scrape the frozen mixture into small ice crystals. Return it to the freezer. Repeat the scraping process every 30 minutes for 2-3 hours, or until the entire mixture is granular and fluffy.

Step 7

Remove the frozen lemon cups from the freezer and fill each one with the lemon ginger ice, packing it gently to create a rounded mound on top. Garnish with a small sprig of mint or a thin lemon twist if desired. Serve immediately.
