Ingredients

  • 500 grams Chicken breast
  • 2 tablespoons Lemon juice
  • 1 tablespoon Fresh ginger
  • 3 pieces Garlic cloves
  • 1 cup Fresh coriander leaves (cilantro)
  • 1 cup Greek yogurt
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 8 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Step 2

Cut the chicken breast into bite-sized cubes (approximately 1 inch).

Step 3

In a food processor or blender, combine fresh ginger, garlic, fresh coriander leaves, lemon juice, Greek yogurt, ground coriander, ground cumin, paprika, salt, black pepper, and olive oil. Blend until you form a smooth marinade.

Step 4

Place the chicken cubes in a large bowl and pour the marinade over them. Mix well to ensure all pieces are evenly coated.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight, to allow the flavors to infuse.

Step 6

Preheat your grill or grill pan to medium-high heat. If using an oven, preheat to 200°C (400°F).

Step 7

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Step 8

Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and charred in spots. If using the oven, place the skewers on a baking sheet lined with foil and bake for 12 minutes, flipping halfway through. For extra char, broil for an additional 2 minutes on high.

Step 9

Remove the kebabs from the grill and let them rest for 5 minutes before serving.

Step 10

Serve hot with a side of flatbread, salad, or your favorite dipping sauces.
