Ingredients

  • 300 grams Mixed olives (green, black, or a combination)
  • 3 tablespoons Olive oil
  • 1 teaspoon Lemon zest
  • 1 tablespoon Fresh lemon juice
  • 2 large cloves Garlic cloves
  • 1 teaspoon Fresh rosemary
  • 0.5 teaspoon Red pepper flakes
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the olives under cold water to remove excess brine and then pat them dry with a paper towel.

Step 2

Peel the garlic cloves and thinly slice them.

Step 3

Heat the olive oil in a small skillet over medium heat.

Step 4

Add the sliced garlic to the skillet and sauté for 1–2 minutes, until fragrant but not browned.

Step 5

Reduce the heat to low and stir in the lemon zest, fresh rosemary, and red pepper flakes. Cook for an additional 1 minute to release the flavors.

Step 6

Remove the skillet from the heat and stir in the lemon juice and black pepper.

Step 7

Add the olives to the skillet and toss well to coat them evenly with the seasoned mixture.

Step 8

Transfer the olives to a bowl and let them sit for at least 30 minutes at room temperature to allow the flavors to meld. Alternatively, they can be stored in an airtight container in the refrigerator for up to 1 week.

Step 9

Serve at room temperature as an appetizer or as part of a tapas spread, garnished with a sprig of fresh rosemary if desired.
