Ingredients

  • 8 pieces Lamb chops
  • 3 tablespoons Olive oil
  • 4 tablespoons Lemon juice
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme leaves, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Red pepper flakes (optional)

Directions

Step 1

In a small mixing bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and red pepper flakes (if using).

Step 2

Place the lamb chops in a large resealable plastic bag or shallow dish, and pour the marinade over them. Massage the marinade into the meat to ensure even coating.

Step 3

Cover the lamb chops and refrigerate for at least 1 hour, preferably up to 4 hours, to allow the flavors to infuse.

Step 4

Remove the lamb chops from the refrigerator 20 minutes before cooking to bring them to room temperature.

Step 5

Heat a grill pan or cast-iron skillet over medium-high heat. Once hot, brush the pan with a little olive oil to prevent sticking.

Step 6

Sear the lamb chops for 3-4 minutes on each side for medium-rare, or cook to your desired level of doneness. Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.

Step 7

Transfer the cooked lamb chops to a plate and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat.

Step 8

Serve the lamb chops hot with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
