  • 1 cup green lentils, rinsed
  • 6 cups vegetable broth
  • 1 leaf bay leaf
  • 1 medium lemon, juiced and zested
  • 0.25 cup fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrot, and celery. Sauté for 5-7 minutes or until softened.

Stir in the minced garlic, ground cumin, turmeric, and smoked paprika. Cook for 1 minute until fragrant.
