Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 piece large egg
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon zest
  • 1 tablespoon lemon juice (freshly squeezed)
  • 2 cups powdered sugar
  • 3 tablespoons heavy cream
  • 2 tablespoons lemon juice (for frosting)
  • 1 teaspoon lemon zest (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, using a hand or stand mixer, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg, vanilla extract, lemon zest, and 1 tablespoon of lemon juice until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.

Step 6

Scoop out tablespoon-sized portions of dough and roll them into balls. Place the balls evenly spaced on the prepared baking sheets, about 2 inches apart.

Step 7

Using the bottom of a glass or your palm, gently flatten each ball of dough to about 1/4 inch thickness.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are just lightly golden. Be careful not to overbake, as they should remain soft.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

To make the frosting, whisk together the powdered sugar, heavy cream, 2 tablespoons of lemon juice, and optional lemon zest in a medium bowl until smooth and creamy. Adjust the consistency with more cream or powdered sugar as needed.

Step 11

Once the cookies are completely cool, spread a generous layer of lemon frosting on each cookie using a butter knife or offset spatula.

Step 12

Optional: Sprinkle a pinch of lemon zest on top of the frosted cookies for extra flavor and decoration.

Step 13

Allow the frosting to set for about 20 minutes before serving. Enjoy!
