  • 0.5 cup Unsalted butter, cold and cubed
  • 0.25 cup Crystallized ginger, finely chopped
  • 0.5 cup Heavy cream
  • 1 large Egg
  • 0.5 cup Lemon curd (store-bought or homemade)
  • 1 tablespoon Powdered sugar (optional for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, granulated sugar, baking powder, ground ginger, and salt.

Cut the cold, cubed butter into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
