Ingredients

  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic
  • 1 tablespoon All-purpose flour
  • 1 cup Chicken or vegetable broth
  • 1 cup Heavy cream
  • 3 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh dill (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Finely mince the garlic cloves and set them aside.

Step 2

In a medium saucepan over medium heat, melt the butter until it is fully liquefied and begins to bubble lightly.

Step 3

Add the minced garlic to the saucepan and sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.

Step 4

Sprinkle the flour evenly over the butter and garlic mixture, stirring well to create a smooth roux. Cook for 1–2 minutes to eliminate the raw flour taste.

Step 5

Gradually whisk in the broth, ensuring no lumps form. Bring the mixture to a boil, then reduce the heat to a simmer and cook for 2–3 minutes, allowing it to thicken.

Step 6

Slowly stir in the heavy cream, combining thoroughly. Let the sauce simmer gently for another 2 minutes.

Step 7

Add the lemon juice, lemon zest, and freshly chopped dill to the saucepan. Stir well to incorporate.

Step 8

Season the sauce with salt and black pepper to taste, adjusting as needed.

Step 9

Remove the sauce from heat and let it cool slightly before serving. It can be drizzled over cooked fish or served on the side as a dipping sauce.
