Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Granulated sugar
  • 0.5 cup Unsalted butter (cold)
  • 2 tablespoons Fresh dill (finely chopped)
  • 1 teaspoon Lemon zest
  • 0.75 cup Whole milk
  • 1 tablespoon Lemon juice (freshly squeezed)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.

Step 3

Using a box grater, grate the cold unsalted butter into the dry ingredients. Alternatively, cut the butter into small cubes. Use a pastry cutter or your fingers to mix the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Add the chopped fresh dill and lemon zest to the mixture, stirring to combine evenly.

Step 5

In a small bowl, combine the milk and freshly squeezed lemon juice. Let it sit for 1-2 minutes to create a quick buttermilk substitute.

Step 6

Gradually pour the liquid mixture into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix.

Step 7

Transfer the dough onto a lightly floured surface and knead it gently 2-3 times to bring it together. Pat or roll the dough into a 1-inch thickness.

Step 8

Use a biscuit cutter or the rim of a glass to cut out biscuits. Press straight down without twisting for the best rise. Re-roll scraps as needed.

Step 9

Place the biscuits on the prepared baking sheet, leaving a small gap between each one.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the biscuits are golden brown on top.

Step 11

Serve warm with butter, a drizzle of honey, or alongside your favorite main dish.
